You can disable FindFast simply by removing it from the StartUp Group. The problem is that Ms Office will continue to use the index made by FindFast, which will rapidly become inaccurate.

By the way, unless the index is corrupt, or you're creating documents while the backup is running, it's unlikely that FindFast is interfering with your tape backup. If it is, you can instruct most backup software to retry busy files after a few seconds and then skip if still busy, etc.
